Katsumi Saito joined Conrad Tokyo in 2017 and worked at all-day dining restaurant Cerise and our modern French cuisine restaurant Collage. He moved to the banquet kitchen in 2020 and won a promotion to banquet chef in 2023. Katsumi now supervises Conrad Tokyo’s wedding and banquet menus, as well as the savory dishes served in the sweets buffet at Cerise.
Before joining Conrad Tokyo, Katsumi honed his skills as a chef at NOBU TOKYO, a leading restaurant in a popular global brand serving innovative modern Japanese cuisine, and Restaurant Sant Pau*, a Michelin three-star restaurant originating in Spain’s Catalonia region. He also worked at Tokyu Hotels, where he deepened his passion and skills as a chef and won awards in the group’s cooking contests.
Utilizing his considerable experience in a variety of culinary genres including Japanese, Spanish, and French cuisine, and all-day dining at hotels, Katsumi is dedicated to creating memorable moments for all customers while meeting their individual needs.
